A single bunch contains 144 tiles. You cannot divide those 144 tiles between multiple tables to run simultaneous racing games, because each full game requires the entire bunch to function correctly.
With 24 students and one pouch, 8 students sit at the table to play one game while the remaining 16 students act as word judges. Each of the 8 active players draws 11 tiles at Split, leaving 56 tiles in the bunch.
During play, every Peel adds 1 tile to each player from the bunch. When too few tiles remain for another Peel, the first player to place all their tiles calls Bananas. The other 16 students inspect the grid to verify the words.
Three separate pouches allow all 24 students to play simultaneously across 3 tables. With 3 pouches, each table runs its own independent game of 8 players with a full set of 144 tiles.
